Luana Fonovic Sahbaz is CEO of Velun Dori London, the niche consulting group focused on delivering insight and knowledge to hospitality professionals and executives.  A graduate in Hotel & Restaurant Management from renowned Swiss Institut Hotelier “César Ritz” and holding a Business Administration Diploma in Sales & Marketing, Luana has worked her way up through luxury hotels in Europe, U.S.A and U.A.E. Her major sectors of influence are Rooms Division and Food & Beverage along with extensive knowledge in all levels of hotel management, bringing her a unique perspective as well as granting a hands-on approach to consulting services.

Nedim Sahbaz is Managing Director of The Art of Food, a branch of Velun Dori London which specialises in F&B concept development and support to established businesses. Nedim has enjoyed a successful career developing state-of-the-art menus and running a wide variety of kitchens both within luxury hotel chains and privately owned fine dining restaurants. His talent for crafting epicurean recipes and menus, developing proven kitchen operations and training staff keeps him in high demand. Nedim attended the Institute of Mediterranean modern cuisine where he refined his kitchen skills and acquired a broad spectrum of experience in culinary innovation.
